Another successful Healthy Muffin Baking Session for Jessa! These muffins are Banana Chocolate Chip and eggless (because the Amazon Fresh groceries haven’t arrived yet 😉 !
1.5 cups of whole wheat flour
1 cup of rolled oats
1/2 cup of brown sugar
2 teaspoons of baking powder
1 teaspoon of baking soda
1/2 teaspoon of salt
6 ounces of almond milk
4 ounces of cinnamon applesauce
1/2 teaspoon of vanilla extract
2 large, ripe bananas
Preheat oven to 400 degrees.
In a bowl, combine flour, oats, sugar, baking powder, soda, and salt.
In another bowl, mix together almond milk, applesauce, and vanilla.
Put it in the wet mix in the blender along with the bananas and blend well.
Stir the flour mixture into the banana mixture.
Sprinkle in the chocolate chips and mix.
Pour into the muffin pan.
Bake for 20 minutes.
